I woke up a little late this morning and kept breakfast light because I knew an early lunch was in store, seeing as I had to be at work by 11:30.
And it was SOOOOO easy...here's the components:
- 1/3cup Black Beans
- 1/2 cup cooked lentils
- ~1/3c chopped onion (or really any veggies!)
- 1/4c Whole Wheat Bread Crumbs
- 1 egg
- 2T Chia Seeds
- Seasonings of your choice (I used Garlic Powder (I was out of the real stuff) and Mrs. Dash Table Blend)
MASH the first two ingredients
Mix in the remaining ingredients
Divide into 4 Burgers. (could it be any easier?!) I froze the other 3, wrapped in foil.
Oh ya....I cooked them on Medium heat in a frying pan sprayed with PAM for 10 minutes, flipping half way through.
After a long day at work, I rushed home and fixed some Tuna Salad Lettuce Boats. I mixed one can of tuna with Honey Mustard, split it between four romaine leaves and topped it off with chopped carrots. It was delicious, but I only ate 2 of the 4 because I knew that I needed some carbs to make it through my INTENSE spinning class that was full speed ahead!
- 4 small strawberries, sliced {all that was left! :( }
- A Small Banana, sliced
- The rest of my Vanilla FF Yogurt (about 1/4 cup)
I only ended up eating ~1/3 of that GNU bar! I absolutely LOVED the texture, but orange in any other form than the fruit doesn't exactly agree with my tastebuds. I can't wait to try the chocolate one though! I gave the remainder of the bar to my mom, who thought it was very good!

That burger does look amazing, especially with the laughing cow cheese! I do the same thing as you as far as buying canned and being "too lazy" to buy the dried beans, even thought they are cheaper. Sometimes convenience just wins, but I think the dried beans work better for most recipes (after they've been cooked of course).
ReplyDeleteEnjoy the POM drink! I don't know if I'm such a fan. I've had my POM in the refrigerator for about 3 weeks now and it's only half empty...maybe I got the wrong flavor.
Lentils are SOOOO good! And good for you. And cheap! How can ya go wrong?

ReplyDeleteyay i love love love your burger. It looks like those expensive restaurant veggie patties that aren't even all that healthy for ya, but taste AMAZING. Good for you for buying lentils raw!! I'm just tooo lazy to buy them NOT in a can, but it is seriously a money saver. :)
