Whip it! Whip it GOOD!

I had no time or energy to post last night; but check out the "after-work treat" that I enjoyed!

Now before we get to my scrumptious eats from today, I MUST share something with you. If you have watched any TV in the past few weeks, you have probably seen this commercial...Yoplait gets around! ;) Well, I have never been a big fan of Yoplait Whips, but the idea of a creamy frozen treat ALWAYS gets my attention! So I bought a Chocolate Mousse Style Yoplait Whips! at the store the other day and a few days ago (yesterday? Monday?), I popped it out of the freezer and dug in. Supercalifragilisticexpialidocious...it tasted like chocolate froyo or, dare I say, ice cream! A new cheap, easy to find, single serve "ice cream treat"?! These will come in so handy at school with my tiny freezer space! This is ingenious!


On to today! It's already Wednesday...how did that happen?! Anyways, I woke up this morning at 7AM and grabbed a cup of coffee. I did something a little different today...
Half Coffee, Half Milk (like always) with 1/2 packet of truvia and **pumpkin pie spice** YUM
The star of the show was the breakfast cookie that I made yesterday! It was a little more wet than usual, but it was still phenomenal! Into the mix went:
  • 1/3 cup oats
  • 1T MaraNatha PB
  • 1T Coconut
  • a Splash too many of milk
  • 1T Chia Seeds
  • Almond Extract
  • 5 Random Chocolate Chips that added some delightful, surprise bites!
  • Pumpkin Pie Frosting (Pumpkin Pie Spice, 1/2 packet Truvia, Plain Yogurt)

Before leaving for the gym, I had half of a JamFrakas bar and a handful of frozen grapes. I spent one hour on the treadmill and enjoyed every minute of it! Wait, enjoyed?! YES! I enjoyed the walking at a 13% incline, I enjoyed sprinting at 7mph, I enjoyed jogging...enjoyed it all! I never thought I'd see the day. It probably had something to do with the best talk show ever, which I was watching...LIVE with Regis & Kelly! LOVE THEM! ♥ No, really...I love their show.

Let me count the ways:

  • The pictures of Gelman in full exercise gear (haha!), the compatible/symbiotic relationship between Regis & Kelly (they just jive!), the never-ending stream of contests (who doesn't love a good contest?) and all of the celebrity hosts make the mornings that much better.
  • The conversations between Regis & Kelly, which make me laugh while running on the gym's treadmill (I literally have to take my headphones out sometimes so as to not make too much of a fool of myself in public! haha).
  • The way that Gelman chimes in from time to time with random musings...and no tie! ;)
  • Regis & Kelly calling for whatever variety of LIVE's trivia that may be going on at the time (something is bound to happen with that old school black phone and the person who may or may not be on the other end of the line).
  • Kelly's CUTE outfits!
  • The Spontaneity of the Show...
  • All of the coffee mugs on the desk...there's like four! lol
  • LIVE's Top Dog Contest which airs next week...I entered my baby, but she probably isn't cool enough to be featured?! Just don't tell her that!
  • I could go on...

When I got home, I munched on an apple! After getting ready, I joyfully jumped into the kitchen with an exciting plan of what to make for lunch! Well, exciting to me. Despite the fact that I left the Kale Chips in the oven about 2 minutes too long (and they were steaming burnt...those darn things...you have to cook them so carefully!), the star of the show was more than satisfying... Oven Baked Quesadilla anyone?

  • Preheat oven to 375*
  • Saute Green Peppers and Onions until caramelized to perfection
  • Cut a WW Pita into two tortilla like circles (this is not as easy as it may seem because they can tear so easily!)
  • Spread 1 Triangle of Laughing Cow Light Swiss Cheese onto one side.
  • Spread 1/2 of a microwaved Sweet Potato onto the other side.
  • Pile the peppers/onions and black beans on top of one side and sandwich the two halves together.
  • Place on a greased cookie sheet.
  • Bake for 10 minutes (along with a batch of kale chips, if you would like!).

Serve with some plain yogurt and tomatoes....MMM!! :DAfter lunch, I made a tiny dessert with about 1/3 cup peach froyo and 2 Late July Mini Whole Grain White Chocolate Sandwich Cookies. YUM! (and yes, somehow I miraculously stopped after only 1/3 cup).
Dinner will probably look something like this...
These are pictures from yesterday; which means that YES, today is my 3rd day in a row to make this combo. THAT is how freaking amazing it is!

And when I get off work at 10:30, I may or may not try out one of these alluring bars...

  2. you are such the froyo queen...which means you have to go read the post i wrote this morning! i made gena's raw banana soft serve...and it's amazing. you've probably seen a lot of people making it lately. GO MAKE IT! you will not be disappointed.

    i haven't made kale chips yet, but i made a massaged kale salad last night and i'm in love. you should try THAT the next time you want to make the chips. :)

  4. Does the yogurt not get hard and icy? Does it stay creamy like icecream/froyo should be?? AMAZING!

    I've been dying to try the breakfast cookie idea, but it's not such a great portable breakfast... some weekend I'll get to it!

    Gee I wish I could be around you all the time and eat your froyo! mmmm..peachy!

  9. Hey love! omg...ya know those little fro yo cups that only you and i have been able to find..peach mango is my absolute FAVE! so i am waayyy jealous of your peach fro yo!

    and although ive thought about it on numerous occassions i really never thought throwing regular yogurt in the freezer would make it into fro yo...but why not..theyre the same thing right!!! such a good idea!! thanks for testing it out for me girlie!!

    ahh i love me some kelly and regis..as well as kathie lee and (i always forget her name) rhoda, gida, ahh crap i cant remember lol

  10. Oh I love the Yoplait Whips!! I haven't had them in a while, and I really like your idea of putting them in the freezer, very clever! Oh, and the quesadilla looks wonderful. I've been doing a lot of melted cheese on whole wheat wraps lately, late at night. It's wierd, I get late night cravings for cheesey quesadillas!

  12. Although nothing beats running in the summer sun to me, I do kind of miss running on the treadmill watching tv. it feels like accomplishing two things at once. And I watch regis and kelly every morning(except this morning cuz I had work).
    If you still have those kashi oatmeal packets lying around check my blog tomorrow. I made up a recipe for blueberry vanilla muffins using them because I was feeling lazy. I mean, feeling creative.

  16. I just saw the yoplait commercial and was wondering whether to try it or not!! Do they have any artificial sweetners? Doctors says im not allowed to have them... boo...

  18. Wow, that frozen yogurt looks really good to me right now. I need some... And cones! I love ice cream and yogurt in cones. :D It makes everything way more fun to eat. Even though, when you think about it, cones sort of taste like styrofoam. D:
