Peanut Butter Sorbet

Doesn't that sound good? Well, don't get too excited! I was just making a mish-mosh title per usual! ;)

Today was full of random goodness...so I'm going to switch it up with a little list-action in an effort to make it less random:

1. First and foremost, my delightful fruit stash is dwindling... 2. I found these Solomon Whole Wheat Pita Pockets for $2.29 and they pretty much rock!
After letting it mature into a hot, doughy delight in The Foreman, I topped it with MaraNatha PB & Cinnamon (which just came flying out of the container...hence the messiness!).
3. Remember this Sorbet from my post yesterday....

~5 cups of Chopped Honeydew
Along with some strawberries, lemon juice and a simple syrup...
Next to my mom's not-so-healthy creamer!
The little one was dying for some melon...Is it possible to say no?!
Lunch was delightful...and my Kale Chips turned out perfect! 11 Minutes at 375* (not 15 minutes like yesterday).
Carrot Slices, Lentils, Cheddar, Tomatoes, Honey Mustard...in the Foreman (of course!)
Seltzer, Lemon Juice, POM Juice...I put it in the freezer for about 2 or 3 hours and this happened! Refreshing!
Anyways, back to the sorbet....Look at it after a good 15 minutes in the Ice Cream Machine...AHHHH! :D

4. Print out this coupon and head to Starbucks on Tuesday morning! I'll be sure to go after pilates!
5. I am going to really focus on exercise, whole foods and sleep this week! This weekend has been a bit too indulgent food-wise! I hope to do full reports each day to help me stay on track!
6. Shutterfly has their Calendars on sale until July 22! I am going to make one for my dorm...ony $13!? Schweet!
7. I work 5 out of 7 days this week...and I thought I was part time! Owell! It's bittersweet!

9. I have 19 days until I leave for Kansas to see my family and when I get back, I have 4 days until I leave for school! Bye Summer! I will definitely miss you!

I'm a Barby Girl...

...In a Barby World....Imagine Sauciness...It's Fantastic...


I planned on going to the gym this morning, but going to bed @ 1 and getting up at 7 just doesn't jive well with me! I have GOT to get to bed earlier! Period.

Breakfast consisted of...what else....fruit from my never ending stash (Thanks to my Edible Arrangements Bouquet!). And a piece of WW Bread with MaraNatha PB & Preserves...MMM!
After showering and getting ready, I sauteed one of my homemade veggie burger into a "Veggie Burger Hash", along with some extra green peppers and onions...on to a bed of romaine it went!

The Hash OBVIOUSLY had BBQ Sauce thrown in the mix! ;)
Then Alexa and I went shopping and had a bunch of fun! I got a Coffee Frap Light in the Starby's at Target! We got some cute stuff for our bathroom at school next year and I found some sunglasses (Because now I can actually wear them!).
Not sure if I'll keep them or not yet...
And Alexa gave me my B-day present (I didn't get to see her yesterday!)
A super cute plate (Did I tell you that I love dishes?) and an Ice Cream Book! :D
And I found the perfect recipe to try first (I can make good use of the melons from that massive Bouquet!)

I hope everyone has a good friend like this!

I came home (with some new WW Pitas in hand) and heated up the oven to 375*. I made a batch of Kale Chips, which I let go about 2 minutes too long...so I only finished about half of the slightly burned chips...Better next time!
The STAR of the show!
A WW Pita topped with BBQ Sauce (I was quite the Barby Girl today!), 1/3 Smashed Sweet Potato, Lentils & Mozzarella. I baked it at 375* for 15 minutes and it was PHENOMENAL!
OH yum!
About 30-40 minutes later, I satisfied a slight craving with this yummy concoction from a few days ago...
Now I am going to read a few blogs before Alexa comes over to watch a movie...and enjoy a slice of Oreo Cake with me!

It's My Birthday! :D

That's right! As of today at 6:15PM, I am 19 years old and loving life! ♥

Another adorable plate that I will use year round...because I am cool like that! After a quick (and I mean QUICK because my Ipod was unknowingly dead!) morning trip to the gym, I headed to Smoothie King with a BOGO coupon and got a Skinny Strawberry Yogurt D-Lite! Not a KEVA, but fairly good! My Movie Snack! My mom and I went to see the Proposal today for my birthday (I work tonight) and, even though it was my second time to see it, it was so funny! My mom loved it too!

I've seen them all...

...Or have I?! Apparently not because I am currently watching Food Network Challenge-Chocolate Landmarks. Remember the Food Magicians from yesterday?! I love this show! And there is a new episode of Chopped on tonight! Oh, the things that excite me...


Anyways, I didn't post yesterday; but I do want to share a picture of my lunch with you all....MMM! Gotta love the crunch of those Ian's Fish Sticks! :D
I woke up bright and early this morning and was feeling up to getting out of the house! So after one week of not going ANYWHERE, I got up at 7AM and got ready for the gym (Yay!). Before heading out (at 8:30), I put my new SunButter Sample to good use.
I drizzled about 1/3 of the packet over a Kashi Heart to Heart Waffle and it wasn't too shabby. Honestly though, the sunflower flavor was very prominent and I think I prefer AB or PB! In my opinion, Sunflowers should remain whole for salads and ball games...unless you have allergies to nuts...then you might enjoy this product! I enjoyed a nice pilates class and rushed home to shower, get ready, eat and go to work! As quick as light, I was ready and in the kitchen. I decided on a grilled tuna sandwich with lots of mustard, carrots, mozzarella and romaine. Alongside, I had a peach and a plum. The peach was on it's verrrry last leg (but still tasted okay) and the plum was at the peak of perfection! Just how I like it!
And I was gone...
...Until 5:00, when I came home and got 1.5T Chia Seeds soaking in 1/2 cup milk, while I changed for the gym.
Chia Seeds are so funky! Here's their mug shot after a good 15 minute soaking!
I threw the Chia Mixture in the blender along with:
  • 1 frozen, chopped banana
  • About 5 frozen Cherries (more for color than flavor)
  • About 1/2 cup of StonyField Farm FF Vanilla Yogurt

Half of the mixture went into my re-used 6oz Kemps FroYo Container and is currently firming in the freezer (Can't wait to see how it turns out!). The remaining half was blended with about 1/2 cup ice and served up as a refreshing & satisfying pre-SPINNING snack. I topped it off with some of my MixMyGranola creation.
And my hand dug into the MixMyGranola container like 3934837 more times! ;)

Darn Carbs! I just love 'em!

When I got home from spinning at 8:00, I was starvin marvin and, apparently, mom had made a trip to the store after work...
I ate a small handful (Practicing Restraint!) while I fixed dinner...
I could have eaten the whole bag! YUM! Dinner was composed of half of a sweet potato (The mother of all sweet potatoes), about 1 cup of 365 Vegetarian Chili and a combo of yellow squash and broccoli (This was supposed to be spaghetti squash, but I had frozen and defrosted said spaghetti squash... it sounded like a bad idea when I was doing it. haha Yep, it just didn't defrost correctly...too mushy. So I improvised!).
And as pretty as that picture is...Here is what the true delicous-ness looks like:
I am excited to be out in the world again (haha!)...although my eyes are still all red and my vision is not 100%. My birthday is on Thursday! WOOT! But I work that night...However, we don't tend to go all out for birthdays anymore since we've all gotten older. I'll probably just hang out with friends on Friday/Saturday....which is fine by me!
Now I am off to enjoy the same brownie/IC dessert that you can see here and play Sequence with mom!
