Good news! I saw a dog today!

Speaking of Penny's Low Fat Desserts...Alexa and I made some Ice Cream Sandwiches again with the Chocolate Peanut Butter Cookie.


Hello, my tasty friends... :P Okay, so I stumbled upon the most amazing oatmeal ever. The ingredient list. The nurition profile. THE TASTE! Holy Moley, folks...Nature's Path Hot Oatmeal has blown me away! Their Granola Bars seem to have the same effect...

Sabra Roasted Red Pepper Hummus

I won't lie. The flavor could have been much stronger. However, the creaminess of this concoction will make me look past that! MMM!

N'nD Stadium Nachos

Look at this picture and tell me it doesn't look like the nachos that you get for $4 when you go to a sporting event and sit on freezing cold or burning hot bleachers (not that those aren't good from time to time...).
I literally felt like I should be screaming "Go, Team, GO" while licking the cheese hummus off of my fingers.

Smart Ones Traditional Lasagna with Meat Sauce:
Worst Frozen Meal Ever.

  • Thick, tough, slimy noodles make up about 90%


  • A thin "layer" of ricotta that you can see through is present and accounted for...barely


  • About half way through, all you have left is fat, flavorless noodles


  • The picture on the front of the box is of another dish altogether


  • They attempt to cover this all up with a big blob of spaghetti sauce on top of the dish...They can't fool me! I ate it all because I was hungry...and never want to experience it again. Thank you.



 This salad from the other day was slightly more refreshing...

 Cinnabon Cinnamon Crisps
A new find...and I can't make up my mind.


 The nutritional stats are not bad with each ounce having only 130 calories and no saturated fat. The ingredient list starts with whole wheat flour and is quite short. However, all of that goodness aside, I was expecting a crunchy sweet treat when I popped open this bag...


 They look as though they are dusted with a cinnamon SUGAR coating; but the sweetness is pretty much nonexistent. This had me shrugging my shoulder at Cinnabon's new creation. HOWEVER, as I began to munch away, they grew on me. They are not sweet; but they taste like an overly cinnamon-ed bagel chip and now that the bag is gone I kind of miss them. Then again, they were $3.50, so this cheap frugal college girl will have to pass for now...

Nutritious is Delicious

First up: Odwalla Banana Nut Bar


I had high hopes for this bar...the absence of an oven and fresh baked goods had me hoping that this would taste like a slice of homemade banana nut bread.

Overall, it tasted like a dense piece of banana bread with smooth, good-sized walnuts and a subtle, natural sweetness. HOWEVER, there is a sprinkling of crisped rice throughout the batter that I would really rather do without. It tastes like stale crisped rice and totally detracts from the dense and delicious nature of the bar... so much so, that I will not be buying this bar again in the very near future...
How'd this sneak in here?! Well, it was a delicious egg sammie, so I'll let it stay.

A quick microwaved egg scramble and a slice of provolone cheese met up with Arnie!
Next up to bat: Nutridel
When this little package arrived, the fact that I was to be at a formal Scholarship dinner in T-minus 1.5 hours no longer mattered (by the way...I had the best apple pie EVER at that dinner...). I popped open the Pecan Cookie and planned to only eat one of the thin little guys...I ate 'em both! Whoooooops! One plus to these little babies is that each cookie has only 59 calories...eat 'em both and you've only downed 120 calories of pure joy! ;) Heck, I would have broken into the Almond Pack too, but I did show some restraint...They also have 2g of protein & fiber (or 4g if you eat the twin pack in one sitting).

Ingredients: Whole Wheat Flour, Wheat Bran, Amaranth, Pecans, Molasses, Sunflower Oil and Natural Pecan Essence. Doesn't get much better!
Plus, they pack quite the nutritional punch...But is it a tasty punch?!
You bet your bottom dollar it is! The second that I cracked this cookie into 4 or 5 pieces, a nutty aroma filled the air! 'Twas delightful. The texture is dense and crispy, reminding me somewhat of a Kashi TLC Crunchy Bar. However, the "batter" of these cookie is much finer, making for a denser product. Combine that with the thin nature of the cookie and you have a delicate and flavorful crunch.

I love their instructions and what not...COOK ME SUPER FAST! Of course, I had to take this route because I don't have an oven, frying pan, etc. *tear*
If you do have a panini, oven or frying pan, "You have options"! I can't even imagine how good this baby would taste after popping out of the piping hot oven...Dare to dream.

After a few minutes in the Microwave, I perched it atop a bed of romaine (per usual, when it comes to frozen burritos) and dug in. Well, hello. Okay, so I will admit that the tortilla gets a little tough in some places and a little soft in other places (like ALWAYS when you microwave a burrito); but I am not taking off any "points", per say, because that is just a fact of nature...
The tortilla is great. It just has a different taste/texture than what is expected from your typical frozen burrito and I didn't let any of it go to waste (the hard parts were actually good...crispy, if you will). The filling had a great flavor that was very thorough and provided a little southwestern flair. The crunchy corn, aldente rice and smooth black beans made for the perfect filling. The filling was not overflowing; but was just the right amount.
Overall, I would say that I LOVE EVOL burritos. I think that is the point their marketers were attempting to make...

Full Speed Ahead

I am multi-tasking like no other right now! I have to be at a meeting in T-minus 1 hour, I have a math quiz tomorrow and need to study very badly, I have loads of Math Homework that is taking over and ... here I am blogging! Well, I was actually uploadding pics as I did my math homework. And now I am sporadically typing and well, multitasking. Gotta love it...

...my breakfast from yesterday that is. Microwaved eggs with 1/2 a wedge of LC and broccoli. Whole Wheat toast and the remaining LC made for a lovely pairing. BTW, I don't like cheese in my eggs. It's official! Then I broke out this bad boy: Folgers French Vanilla. MMM! The best cup EVER is always from a fresh container! :D
Apparently my little makeshift breakfast wasn't doing it for me, so I whipped out the ever so tasty Kashi Pumpkin Spice Flax Granola Bar! :D
Whole wheat wrap with black beans, cheese, lettuce and tomatoes. In a bowl because the tortilla was ripping and it was just making a mess! ....plus, I just like to be different! ;)

Twenty and counting!

In twenty days, I will be gazing upon these two CUTE little faces...
I. Can. Not. Wait. to go home! It's just time, ya know?!

COFFEE TIP for the college student:
So... you are in your little dorm with your little coffee maker, your empty wallet (or sheer will to avoid the on-campus Starbucks), crappy coffee in the dining halls and a travel mug that is not microwavable...How can you make a dorm-made latte that will still be hot when you get to class 5 mintues late?

Simple. Make just enough coffee (I make 2 cups) while you are getting ready. Add milk (I add up to the 3 cup mark...I like it extra creamy...plus more Calcium and protein!) and sweetener of choice (**truvia**). Stir. Place the coffee pot back on the little hot plate for about 5 minutes as you gather your things. Pour into your mug. Go to class. No more luke warm lattes!

Edited to add: Starting Healthy suggested that I buy an insulated mug, which is also another great idea for you guys. However, I have an insulated mug. I just run into problems when I pour 3/4 cup of cold milk into my 2 cups off hot coffee and can't warm it up in my mug!
Microwave egg scramble with frozen broccoli atop burnt....err....extra crispy toast with CHEESE! YUM! :D

I bought Fruity Cherrios the other day at Target...on sale for $1.50. Could I refuse?! I LOVE cereal. Period. "I'll drink it, shoot it, eat it, snort it, whatever form it's in, gimme!" (name that Gilmore Girls Episode!).
Are they good for you? No. Are they bad for you? No.
Would I make it a regular cereal purchase? No. Would I eat it for breakfast? No. Are they tasty? You betcha. Better than candy? Isn't all cereal?! You guys. Pay attention. Luna reformulated their bars and I can tell a huge difference in the taste. If you swore off Luna Bars for their chemical-y, wierd texture/flavor profile, rewind and give them another try!

LUNA Caramel Nut Brownie Bar: Basically...a fudgy chocolate brownie topped with a thin caramel icing...and a nice crispiness added in the textural department thanks to the crisped rice.
You know those brownies that have cheesecake swirled throughout the batter? That is what this reminded me of...with caramel instead of cheesecake. Yum!
Alexa and I got a little crazy and whipped up some Ice Cream Sandwiches last night...with a Chocolate Peanut Butter Cookie from Penny's Low Fat Desserts.
We let them sit/harden for a day or so and tonight, straight from the freezer, they were ready to be devoured...
Oh and DEVOUR, we did! MMMMMMMM!

The PERFECT (Cookie) Sandwich

The steps to The PERFECT (Cookie) sandwich:

1. Toast a Penny's Low Fat Desserts Chocolate Peanut Butter Cookie (when you toast these little gems, they are very soft immediately after toasting; but they firm up in a matter of minutes, with the inside remaining fluffy and soft...making for a treat that tastes like it just popped out of the oven and was cooked to perfection).

2. After a minute or two, carefully slice Penny's cookie in half. If you are careful, it's not all that hard.
3. THINLY slice half of a banana onto one half of the cookie.

4. Microwave about 1T of PB and spread the melty goodness onto the other half of the cookie.
5. Sandwich the two halves together and let the melty peanut butter smother the layers of ripe banana and the soft, flavorful cookie.
6. Pick up the sandwich (Penny's Low Fat Desserts Cookies make for the perfect cookie to make a sandwich with when they are toasted! A+++) and gaze at the utter deliciousness that awaits....
7. Bite in...and go straight to your happy place.
The cold, soft, sweet banana melds with the warm peanut butter...coming together to complement the soft, smooth, fluffy, slightly firm chocolate peanut butter cookie (yep! The cookie adds its own level of PB goodness...).
This is one freaking fantabulous, mouthwatering, delicious sandwich! I may never look at Penny's Low Fat Desserts the same way again...
