Wow! That was all I could say after breakfast! The bad news is that I didn't do much measuring, but here is an estimate....
- 1/4 cup whole wheat flour
- 1-2 T oats
- 1 egg white
- 1/4 cup milk (plus a bit more to get a thick batter)
- lots of cinnamon
- 1t baking powder
- a pinch of turbinado sugar
- a splash of maple extract
- a dash of walnuts
Mix it all together, plop it into a sprayed skillet...when it starts bubbling and the bottom looks a little brown, press in some banana slices. THEN, use your master flipping skills (mine involved 2 spatulas!) and flip the bad boy over to get the other side browned up nicely.Lastly, smear PB alllllll over the top! :D
And enjoy every single scrumptious bite....After letting my yummy breakfast settle, I set off to the gym. I did a bit of weights and then ran @ 6mph on the treadmill for 30 MINUTES straight! Now I did take a 2 minute walk break in the middle, but this is a serious triumph for me! I think spinning is building my endurance and I couldn't be happier! I can't wait to go back and challenge my body some more!
Lunch was quick because my mom & I needed to leave and start our errands and
I took too long showering/getting ready!
A mound of lettuce with Amy's Black Bean Chili on top...simple, yet utterly delicious!
My mom and I ran some errands (and I found a new watch at a little shop because my old one broke! It was quite the find!). We stopped by the cereal aisle of Target (duh!) and it dawned on me that I hadn't snapped a pic of my Tall Caramel Frap. Light yet!

We got home at 4 and I had to be on the road by 4:40, so I changed and made exactly what I was craving. I was going to put PB on the eng. muffs, but I decided to
top them off with cheddar cheese and honey mustard instead. As weird as it sounds, it was GREAT and I really got to taste the cheese without it being bombarded with tons of toppings!
Grapes and carrots sat alongside.
We got a sample of these
True North Almond Clusters at Target (and a $1.00 coupon! :D )and then I had another little square before work. They are calorically dense, but tasty and have just the right sweetness to satisfy my sweet tooth..for a little while!

That's it...I wish I had Penny as my neighbor because then I could be her taste tester all the time and possibly get some goodies on the holidays.
Honestly, when I reorder these, I will not be able to choose which ones to get....they all BLOW ME AWAY! Penny's Low Fat Desserts Carrot Raisin Muffin Top is thick and soft. Yet, when you bite into it, it is dense and moist. There is no way this muffin creation only has 110 calories and no fat?! SERIOUSLY?! How in the world!
I love Penny's Food Scientists...they must be geniuses!

I hate to say it....wait, no I don't! Penny's Low Fat Desserts Carrot Raisin Muffin Top beats any VitaMuffin Top I have ever had by a landslide!
They are more similar to a real, high fat muffin in taste and texture ...and they are BIGGER, softer and just better. I know I will probably get ambushed by saying this, but don't kick it until you have tried it!

You do know that vitamins come in a pill right?! No need to get them in your dessert! ;)
ah but how often do you get to say vitamins are in your dessert?! haha i believe you about the penny's desserts though! they look so good. as does your breakfast!
