N 'n D Breakfast Success

N 'n D Breakfast Cookie
(Nutritious 'n Delicious...N is D doesn't sound as cool! haha)
*1/2 cup oats

* 1/2 large banana mashed

* 1 heaping Tablespoon PB
*1 Tablespoon of milk
*4-5 chopped/diced strawberries
* 1 Tablespoon sliced Almonds
*Some people add protein powder, but I just don't like the taste of it!

Mash it all together into a thick cookie dough like consistency (don't add any more milk!). Then spread onto a plate, cover and wait for morning (the hardest part!).

I topped mine with a dollop of the filling from the cake that I made my mom for mother's day! YUM!
After breakfast (and a long History lecture), I went job hunting....blaaah! Not going well, but I'm holding my head high! :D Actually, I got one application and I'm just about through filling it out! This one seems like it might actually go through!
Eventually, I came home and was starvin' marvin' so I whipped up a SUPER QUICK lunch!
  • Leftover Mac n Cheese
  • A touch of Pacific Foods Butternut Squash Soup to revive the Mac
  • One Morningstar Farms Veggie Burger crumbled within

It was so delicious and the soup really kicked it up a notch! Afterwards, Alexa and I went shopping and planned on going to a Body Pump class at the gym, but got done shopping around 4 and the class was not until 6. PLUS we were really tired and ended up doing about 15 minutes on the elliptical and went home! At least we tried! ;)

When I got home, I munched on a homemade Vegan Whole Wheat Cookie! MMM!

An hour or so later and my tummy was grumbling. I know I was a bit lacking on the veggies today, but I knew exactly what I wanted and isn't there an argument out there that you need to eat intuitively! ;) So that's what I did! I made an old time FAVORITE!

  • It all starts with a Whole Wheat English Muffin toasted under the broiler
  • Top with a bit of spaghetti sauce, tomato slices and cheese
  • Broil again to melt cheese
  • And to make this dish perfecto, add some chopped (raw or steamed) broccoli on top! YUM! (I didn't have any....)

Then I felt adventurous:

I heeded advice from some of the commenters on my last post and took another stab at sweet potato fries.......EPIC FAIL......NOT! lol Let me explain..........

I cooked the slices on an aluminum foil lined baking sheet sprayed with PAM @ 425* for 15 minutes, flipped and after 6 minutes.....I checked on them......and they loooked like this:

EEEK!

I got so frustrated and decided to throw them on a plate and eat what I could...

Turns out (though they LOOKED burned) they tasted perfect! YAY! There was about 2 or 3 skinny fries that truly got burned, but other than that, they were great! :D

I see a 100 calorie pack of popcorn in my future and possibly a SmartOnes ice cream dessert!

  2. Yum, that breakfast cookie looks delicious! And I agree, sweet potato/b-nut squash fries sometimes taste best when they get a little bit of that burnt flavor. Yum!

  4. Hey girl! What a beautiful necklace from your Mom! Oh those sweet p fries are tricky little suckers...they may LOOK burnt, but usually they are perfect! I always thought I was burning mine constantly, but nah, they just like to show a little color! Haha!

  8. Well, the keyword is "try" to have dessert once a week. Which I'm doing better by not having it every night, but I'm sure it'll still end up a few times a week lol.

    Mmm, I love those SmartOnes desserts. They have a new, peanut butter cup one. Have you tried it? :)

  12. I LOVE all of your creations!!! Isn't that butternut squash soup so great?? It's my favorite of that brand. I made sweet potato fries today too and they turned out very similar to yours (from looking at your pic). The ice cream I make is with an ice cream maker, I'd recommend the purchase!

  14. I put 2 cups of 1/2 and 1/2 in the freezer for about 15 minutes-20 minutes.

    Mix together:
    1 cup skim milk ( I use soy)
    3/4 cup sugar (I actually use a little less, but just a LITTLE less.
    1 t vanilla
    1/3 t cayenne!

    Add the 2 cups 1/2 and 1/2 to the mix of milk and sugar.

    Add everything into the ice cream maker and wait 20 minutes. After 20 minutes add the unsweetened cocoa powder (about 2-4 T). Then add about 1/2 cup almonds! Mix all together.

  15. Oops! I forgot to tell you about the almond butter. I put about 2 T in the micro for about 25 seconds, then mix it into the mix and sugar mix. Then all of that gets mixed with the 1/2 and 1/2.
