Today was not too busy and I finally finished my History Review! Score! Now I just need to study it.............
Anyways, I am going to give you a quick run-down of my eats today so that I can give you a full report of my stellar dinner concoction!
Breakfast was just as much fun to make as it was to eat! I artfully topped one Kashi Heart to Heart Waffle with a medium banana, One Container of FF Stoneyfield Farm Vanilla Yogurt, 1 T Peanut Butter and Cinnamon!
After church and another trip to the store, I took a Flat Out Wrap, stuffed it with the last of my advocado, 1 Laughing Cow Cheese Wedge and some Boar's Head Mequite Smoked Turkey Breast! I had seedless cucumber slices, baby carrots and a La Croix Lime Sparkling Water on the side!I was going to add some lettuce, but decided I wanted to enjoy the creamy goodness to the fullest! It was SO good!
I found these "Deerfield Farms Snackin' Flax Granola Bites" at Walgreens for $.99 and love them! :D
They are about the size of a quarter, but they pack some awesome flavor!
I also had a bit of Women's Vitality Mix (Trail Mix from the bulk bins that packs 70% of the RDA for Calcium per 1/4c!)
PB PUFFINS! I had a few handfulls of these throughout the day! I have not had them in a while!
About a Tablespoon of PB on WW bread before the gym! I spent about an hour at the gym..... 20 minutes on the treadmill and the remainder in the weight room! :)
Dinner Time!
I wanted Stuffed Peppers, so I made....
N 'n D Stuffed Peppers
To prepare the peppers, cut a good sized green pepper in half and remove the seeds. Then place a pool of spaghetti/tomato sauce into a pie pan or casserole dish. Cover the outsides of the peppers with spaghetti/tomato sauce and place them atop the pool of sauce in the dish.
Preheat the oven to 375*
Now for the FILLING:
First, you sautee the following in a pan with cooking spray, adding more spray as needed (I did mine in this order...these are approximations because I do not use measuring cups when cooking):
- 2 Cloves of Garlic
- 1/4 cup chopped Onion
- 1 cup chopped Red Cabbage
- 1/2 cup chopped Carrot
Then I seasoned with:
- Italian Seasoning
- A Dash of White Pepper (A Small Bit will bring this dish to the next level! :D )
Next, Heat up a frozen veggie burger, chop it up and add it to the frying pan.
Lastly add Cream Cheese and Spaghetti/Tomato Sauce (if you use tomato sauce, you will need to add salt/more spices) in a 1:2 ratio, respectively.Heat the mixture throughout and then add it to the two pepper halves (you could also top the peppers with some more spaghetti sauce here to prevent it from drying out). I had just enough mixture to mound into the pepper halves and still snag a few bites for the cook! OMG You could eat this mixture on it's own in a huge bowl, no problem! So delicious!
Then bake at 375* for 45 minutes and Voila! A most Nutritious and Delicious dinner awaits!
If you want it to look pretty, let it snow! (aka...bring on the Parmesean Cheese!)

ReplyDeleteI just read your last post...LOL about your dogs saving you from the cockroach, ew! My dog would protect me from crickets that would always invade my apartment last year. Except he would rub his face on them and smash them into the carpet, so I guess he hurt more than he helped ;)
