Eggland's Best Poached egg and Mild Cheddar cheese on a Thomas' Hearty Whole Grain English Muffin with some yummy fruit on the side! Perfecto!

And since it was about 11:30, I thought it would be okay to have a little bit of Breyer's FREE vanilla! Oh those midday desserts! YUM!
I got some things done (including sorting some photos into a cute photo album I bought at Target yesterday!). While doing so, I ate enough Goldfish to warrant a picture!
My mom and I then headed to the mall and I found a comforter for my room here at home and one I liked for next year at school! So cute! I'll post pics of my final room makeover when it's done!

When I got home, I was parched (IT's SO HOT!). I wasn't really hungry, but needed something extra cold and delicious. Therefore, I put about 1/2c crushed ice, 1/2c water and 1/2c frozen fruit in the blender and wooooosh....slushie fruit spiked water!
F.Y.I......Mr. Blender does not like frozen chunks of fruit straight from the freezer......you have to give them a zap first!
My mom made a snack baggie to take with us on the road and I dunked in a few times when we got home. My favorite part is the sesame sticks that we got in the bulk bins at the grocery store! MMM!
Then I got BAKING! Look at that Masterpiece! I think it turned out well and my mom loved it! She had 3 small slices! That must mean something! hahaa
It was different from any cake I have ever had. Spongy, but very delish!
The filling called for stuff I did not have, so I improvised and used:
- 1 small container of OIKOS greek yogurt
- 1-8oz block of FF Cream Cheese
- Juice/zest of 1 lemon
- Juice of half an orange
- 4-6T Powdered Sugar
I had about 1/2cup of the filling leftover and it is so good. I will definitely be using it on top of waffles or strawberries soon! I also did all of the dishes (there were TONS) and made dinner! (My mom was out shopping at Walmart and Home Depot...looking for paint chips to match my new bedspread as well!).
Dinner included:
- Roasted carrots, beets, red potatoes and garlic (Beets are GOOD!...but turn your hands PURPLE...lol...it goes away, no worries!)
- Whole Wheat Couscous with mixed frozen veggies, a little seasoning and a touch of Pacific Foods Butternut Squash Soup to get a creamy consistency!
- Roma Tomatoes stuffed with tuna salad and topped with cheese.... then BAKED! LOVE! :D
Then we had dessert! I had one slice with a scoop of Breyer's FREE!
As delicious as the cake was, the ice cream fanatic in me kept me coming back for more.....I finished off my Breyer's FREE (I have not been the only one eating it! lol...though I ate most?!).

As healthy as I try to be, any cereal is fair game....if it is in arm's reach, I will eat it! HAHA
I indulged a bit today, but it was worth it! I wish I could celebrate my wonderful mom everyday....Oh Wait...I CAN! :D
Tommorrow, I start summer school (aka wake up early!), join the gym and turn in a job application to a nearby cafe (I neeeeed a job!). Busy Day!!

ReplyDeletei tried soooo hard to convince my mom to get a snazzy toaster a couple years back but noooo, she just wanted a simple square that did nothing but toast! i will one day get my toaster with the egg poaching thing on the side because i've tried manually poaching my eggs, and i suck at it :D

I hope you get the job! SOOO funny about that toaster, when I went away to college (for the 1st time, lol) my friend's dad bought him that toaster and we were like OMG who the hell would need this? But then he realized it was actually pretty awesome! I hope you had a great Mother's Day!
