I Jumped in the Pool!

Oh wait, no.....I just got out of my spinning class! haha It was awesome tonight!

Before spinning class, I baked some cookies (I just got the URGE!). I found the recipe a while back from a comment by Jess on Jenna's Blog. Here is the recipe:

whole wheat vegan oatmeal cookies

1 1/2 (or one super large!) banana
1/2 c. applesauce
2 tsp. vanilla extract
1/3 c. brown sugar
1 c. white whole wheat flour
1 1/4 tsp. baking powder
1/8 tsp. salt
1 1/2 tsp cinnamon
2/3 c. oatmeal

Preheat the oven to 350*. Blend bananas, applesauce, vanilla and brown sugar (if your banana isn’t overripe you can soften it in the micro). In a separate bowl, mix flour, baking powder, salt, and cinnamon. Mix wet ingredients into dry. Stir in oatmeal (and I added sliced almonds!).

Drop by scant tablespoons onto a baking sheet. Bake for 15-20 minutes or until golden brown. Enjoy! I ended up getting 12 cookies, which is the perfect amount (not too many!)

These cookies are lightly sweet and taste very wholesome! :D


After spinning (and a shower! lol), I decided to make something quick because my tummy was screaming for food! Here are the Culprits:
Annie's "Arthur" Macaroni and Cheese (I used to love that show!)
Garden Blend of Frozen Veggies
A Fresh Sliced Zucchini!
The Baby George Foreman! (We got this at Ulta ...of all places....for $10 a couple years ago! too funny! I love it!)
**Piping Hot and Nicely Grilled**
All together now!
And dessert.....my mom bought some more SmartOnes Desserts at the store today....Brownie a' la Mode anyone?! :D

It's time to watch CHOPPED (I taped it! yay!) and get ready for school tommorrow! After school, I am on the job hunt! We shall see how it goes!
