Granted, I didn't have any ham; but I did have an avocado that was turning brown and begging to be used up. I smooshed about a quarter of the avocado and whipped in an XL egg. After some intense whipping (my kind of morning workout!), I seasoned the mix with a little bit of coarse salt and poured it into a preheated pan.
Meanwhile, I threw some bread in the toaster oven and chopped up some Roma tomatoes (which I sauteed in the pan for a minute when the eggs were done). I would HIGHLY recommend this. I was not sure what to expect, but the eggs were so rich and had an extra element of creaminess to them. It was phenomenal when paired with the juicy, charred tomatoes and crispy, buttery bread! YUM!
