This week has been a whirlwind of events...and not in the best way! I came out of Target to find one of my hub caps missing, my hair was cut WAAAAAY too short, I work 10AM-11PM (no break) on Tuesday before my trip (Also, my last day of work)....yea, I'll spare you and stop there! ANYWAYS...there are lots of great pictures, so let's get to explainin'...

So... I attempted to pile my Chocolate Yoplait Whips into a cone... After one lick, I had two parts to my treat...
And a mess...on my workout capris...
And everywhere else! hahah Yea, so the Whips dont really meld together well in a cone and kind of just crumble off the top. However, once the top was gone...it was a creamy, crunchy delight! :D
Next up to bat... I dressed up a Blue Bunny Strawberry Sedona Frozen Yogurt Granola Sandwich (whew..what a name!) by cutting it in half, drizzling with chocolate syrup and topping with blueberries! Phenomenal...as always!

This is a must try! It doesn't look very melted in this picture, but it was hot and steamy in my mouth! YUM YUM YUM! Take an Oroweat (or Arnold's...K and I have decided they are the same...like Dryer's & Edy's...why do company's do this?) Sandwich Thin and pile 1T PB & 1T Dark Chocolate Chips inbetween. Grill. Enjoy. Period.
These Receptionist Sticks (as they are commonly known) are so good and my mom bought a little box the other day! Skinny Peppermint Sticks dunked in DARK chocolate! Chea!
Now for some fabulous news...Emma from Girl, you just can't dance forever was so sweet and after I commented on how incredibly adorable her customized cardigan was that she was giving away and didn't win....she sent me this cute handmade bow that I can pin onto one of my cardigans. How insanely nice of her! I mean, my gosh, I just found her fabulous blog not too long ago! Check it out right now! She's great and offers more than just scrumptious eats on her creative blog! Thanks Emma! I appreciate it more than words can say....

MMMM! I tried to tell you I love Refried Beans! ;) Atop a crispy bed of romaine...not very photogenic, but delicious! Well, I just got home from work about an hour ago and, while I was planning on going to the gym...I think I just need to listen to my tired body and rest....

So, I am enjoying the one South Beach Product that I actually LIKE (alot)...South Beach Grilled Chicken & Vegetable Pizza with Harvest Wheat Crust...Some pretty darn tasty/fairly healthy comfort food! :DOh and one last thing...in the midst of my not so great week, I looked at Mom on the Run's Blog this morning and saw that I was the GRAND PRIZE WINNER of her giveaway! Yay!

Eat 'n Eat 'n Eat

I hope everyone had a fabulous...whatever day it is! haha Seriously, that is the way I feel right now because everything is moving so fast! I don't leave for my two week trip to KS (to see my family and soon-to-be-mommy cousin! :D) until next Thurs, so I guess I have more like 3.5 weeks until school! Either way, it will come too quickly fo' sho! Lots of eats to share, so let's get to it!

No Pudge Brownie made with FF Plain Yogurt (this is so much better than the vanilla in these fudgy little things..try it!)...and topped with a PB Spoon, of course!
I froze these yoplait delights that I found and then defrosted it for about 10 seconds in the microwave...not as creamy as Yoplait Whips; but still pretty darn good!
Muir Glen Organic Southwest Black Bean Soup...I haven't tried a Muir Glen soup that I didn't like!
Plain yogurt and some croutons took this soup over the top!
N 'n D Chickpea Spread
(yes, you could call it hummus; but it's a little thicker and funkier! TRY IT!)

Throw the following into a blender to reach the right consistency...
  • 1 can chickpeas
  • Juice of 1/2 a lemon (This is key!)
  • LOTS of Chili Powder & Garlic Powder
  • ~3T Plain Yogurt
  • 3T EVOO (plus a tad more drizzled in as needed)
    I first tried it with steamed broccoli and OH MY! It reminded me of Jason's Deli Roasted Red Pepper Hummus, which is to die for!
    I found these stellar waffles at H.E.B. and they are awesome! They have such a contrast between their soft middle and crunchy exterior! MMM! I have used them in so many ways.

    Why, Hello....

    Savory Waffle?! Oh yes I did! Saute shredded carrot with thinly sliced onions and green bell pepper. Top a Whole Wheat waffle with 1 triangle of Laughing Cow Light Swiss cheese and pile your sauted mixture on top. Italic It was seriously phenomenal! A must try! Emily's First Apricot! That's right folks...while I have had too many dried apricots to count, I have never biten into the real deal. They are kind of mushy, but have a nice flavor...Are they supposed to be a tad mushy or were mine just over ripe?!

    I also collaged the cover of my planner for next year... pretty cute, huh?! I think these Oroweat Sandwich Thins that I found might be a little bigger & sturdier than Arnold's Sandwich thins! Seek them out and tell me what you think! I like them better. MMM! Melty Cheese :D

The Most Bang for your Buck

These past few days have been crazy busy with shopping (I had an Old School treat while roaming around Target with my mama...a Coke ICEE! :D), eating (haha), working, hanging out, etc...I have a whole host of random pictures! I only have 3 weeks until I head back to school (WHAT?!)...2 of which I will be on vacation during...so I plan on making the most of this upcoming week (perhaps a little baking adventure and lots of great eats!). Let the randomness commence....

OMG OMG OMG! :D I found 100% Whole Wheat Oroweat Sandwich Thins! SCORE! Unfortunately, my first meal with them was shoved down my throat in the form of a PBJ with the 10 minutes that I had to get ready for work this morning after a spur of the moment shopping trip (grocery and not)...I was going to blog earlier this evening before heading to Alexa's; but instead, my dad and I decided to make 2 huge salads and watch Cops together! haha Great Times!
  • Enough lettuce to feed a crowd (my dad piled it high for me within a HUGE bowl)
  • Portabellos
  • Lentils
  • Onions
  • Green Peppers
  • Carrots
And I dressed it up the only way I know how....

Another salad...but this time with a different dressing...what could it be?!!
Maple Grove Farms of Vermont Fat Free Poppyseed Dressing (I found it in the fridge thanks to a spontaneous purchase by my mom). It is fairly good and nice as a light/refreshing salad topper; but the vinegar flavor is much more prominent than I was expecting!
On Saturday, My mom and I not only went to Target; but we also went to "Ta-Ta-Ta-Ta-Ta-Ta-TJMAXX...you should go"! I got three cute cute shirts, a pair of white capris, a mirror for my dorm and this adorable Vera Bradly Inspired Duffle for $15! Woot! I can always use more totes to get to and from school!
And I found this sweet bulletin board with a chic look (for the dorm!).
Olde Hearth Honey Wheat Bagels! I found these at Target for $1.50 and decided to try them out! SO SO Glad I did! They only have 190 calories (less than your average bagel; but more than the light bagel varieties). I have never thought that the light varieties have the same doughy goodness and texture...I think Olde Hearth is the perfect middle ground! :)Topped with LC Cheese Wedge, lentils, onions and chili powder....and baked @ 375* (with kale chips) for 10 mintues...
ANOTHER NEW PRODUCT! Who else has seen these?!
Yoplait Delights Chocolate Raspberry ParfaitThey are a bit thicker than yogurt, but not as thick as Jell-O. Honestly, they are not bad and will satisfy your sweet tooth, but the chocolate variety (I haven't tried the others) has a slight aftertaste and...well, I prefer my frozen yoplait whips for now....but I do think these will be welcomed with open arms by many...and for good reason.

Last, but NOT least, I was graced with some coupons for free Sunshine Burgers and...while I know of a place around campus that sells these tempting burgers...I am on a hunt to find them sometime before then!
