Breakfast Pizza

Mornings are typically rush rush rush as I attempt to get out the door and into work on time. Therefore, good ole PB&J oats accompany my coffee more often than not...
Simple, filling and delish!
The weekend = More time for breakfast!
Now, the only reason that I am calling this a pizza is because it smelled like a pizza while I was prepping it. The kitchen was radiating with delightful smells.

While an english muffin was getting crispy in the toaster oven, I whipped together an XL egg and a few spoonfuls of lentils. I also raided the spice cabinent and added a dash of this and a pinch of that. Into the micro it went for about 1 minute (stirring after 15 sec.).
I sliced my little egg puff into 4 portions and layered them on top of the toasted muff. I lightly drizzled it with Wish Bone Romano Basil Vinaigrette for the perfect finishing touch!
(If you have smaller bowls or ramekins, you could just place the little circles on top of the circular eng muff like a puzzle!)
It was so simple, yet so divine!

If you want to add some veggies/cheese, I wouldn't object! I would suggest that you add them to the micro-ed egg puff though, so that they won't fall all over the place. Sandwich the two halves together and wrap with a bit of foil for a portable, nutritious and delicious breakFAST! :)

QC

No, I am not talking Quality Control (although, that is what I am talking about for most of the day!). I am talking about QUICK COOKING! We have all been there at one time or another: You get home from a long day at work and just feel like sitting on the couch, turning on the tv (or computadora) and muchin' on some carbohydration!
STOP. Collaborate and Listen.
I have become a master at quick cooking since starting my internship and the past two nights have started like this:
Wash, tear and store lettuce in a tupperware container lined with paper towels for fresh, crisp lettuce the second that you walk in the door. Heat up some canned chili on the stove!

This was actually a vegetarian store brand...I was impressed. The only way to truly test if your chili is hot enough. ;)
Since the chips are out...Make it a twist on a taco salad.
Now THAT is comfort food!

The following day, I decided to cook some lentils.
Am I the only one who LOVES the smell of the house when lentils are cooking?? 30-45 minutes is a long time for a hungry girl to wait, so
I whipped up a little quesadilla in the mean time...
These tortillas are ammmmazing! The yummy flavor of corn tortillas with the soft texture of a flour tortilla. MMM MMM!I then whipped out my new, flavor packed vinaigrette...
Wish Bone Romano Basil Vinaigrette
Simply Delicious.
Tonight, my new roomie and I are going out for smoothies... my favorite kind of "fast food".

Whew! How is everyone? I am going to either have to stop taking pictures, get a bigger hard drive or...BLOG! What a novel idea. Along we go:

Simply Cinnamon. :) They were a bit crispier than pop chips, yet more "air-y" than a traditional chip. The apple flavor was subtle and the sweetness was on the lighter side (only 3g of sugar per serving). At first, my sweet tooth told my brain that these babies were a no-go; but by my second handful, I had shut up that pesky tooth and I was HOOKED!
The ingredient list is fairly impressive, which is what Revolutionary Foods is going for.
The nutrition profile is pretty snazzzy too!
Read all about the company's quest to expose school children to healthy food and to teach them about nutrition here. It's a great idea to pursue!

The first morning out of the dorms and this is what I fix for breakfast? Yea, well I was tired and just wanted to keep things simple.
Yogurt, Banana slices, crumbled biscotti (Yum yum!) and

You know you're a food blogger when...

You mix up your frozen dinner to make it look prettier.
Sure, you do it to get the stuff evenly dispersed and because you are anxiously anticipating your first bite, but at the forefront of a blogger's mind...
looks are everything.
You email your grocery store to ask them to carry more products, so you can use the coupons that the company sent you.
Still have yet to see new flavors... I did enjoy the tried and true veggie fajita variety... Yum!
