How do you do it?

Get your greens in, that is. I am a carbalicious lover. Don't get me wrong, veggies have a piece of my heart too...just not as big! ;) So, how do you get your veggies in? Here's a few of my incorporations from the past couple of days...

Frozen peas/carrots to Muir Glen Southwest Black Bean Soup (which was PHENOMENAL!)Egg white scramble with black beans, zucchini and chives
Taquitos...wait, what?!
Eat them like a mini burrito over a bed of shredded lettuce (something other than iceberg would have been preferable) ...only me, I know.
Baked potato (cut into chunks) topped with a veggie-licious bean mixture, adorned with Pacific Natural Foods Roasted Red Pepper Soup and lotsa Parmesan Cheese! So easy and SO good!
Salads! As long as this dressing is around, I will devour salads. :)
Kale chips (Click here and make some for yourself. Please.)
Like the new layout? I got tired of the old one...not sure if I am in love with this one quite yet, but I don't think I'll have the time to change it much with the hustle and bustle of the coming days. If only I was a little more Blogger savvy...Oh, oh, oh...FREE STARBY's ...CLICK HERE.

  1. Great veggies. I usually try get my 5 portions of fruit or veg, normally in a salad or with meat.
    I love the new layout, the colours are great and go really well together. I just changed mine too, but am not sure about it. It took so long to do I don't wanna start trying to change it so I'll see if it grows on me.

  2. Green smoothies are a great way. I also love anything that combines beans or pasta with lots of veggies. One of my new favorite dinners is a big batch of roasted vegetables. A favorite combination is asparagus, new potatoes and portobello mushroom. Yum!

  4. I am with ya girl. getting in my carbs? no prob. Fruit? easy. Healthy fats? got 'em. Veggies? meh, not so much. Thanks for the inspiration my green guru :)

    How do I get my veggies in? Umm...my mom is really good about serving veggies are nearly every meal. And I love my chipotle salads!

  8. ohh that is such a smart way to get your veggies in!! I always add tons to my pasta to bulk it up volume & nutrient wise.

  12. Love the new layout. I was so tired of mine. You gotta like it if you look at it so often, and others do it. I like the upgrade. Looks like you have managed to get some veggies in. I only really eat veggies with dinner. Sometimes at lunch though.

    I try to have a cup of veggie soup every day now. I also have a cut up veggies with hummus as one of my snacks. It is hard I will have to admit.

  19. Im a veggie-o-holic. Right now im hooked on these massive salads with some vegan slaw dressing. I just crave it. I also am in love with stir fry veggies. It looks like you are getting enough veggies in though! All your eats look great. Cool new format too girl!
