These were on sale for $.50 at Wal-Mart....I piled them high in my cart and have already barreled through 3 or 4 of them in the past 3-ish days! ;) LOVE!

Well, I work tonight from 5-10..then I come home, eat a homemade frozen fruit/yogurt parfait and hit the sack. Tomorrow, I'll wake up around 9AM, get ready (EAT & DRINK NOTHING! I'm going to really suffer without any water in the morning!) and hit the road by 10AM. My eye muscle surgery (on both eyes) is at 1PM. Keep me in your thoughts and prayers and I hope that I will be back up and blogging ASAP! I also hope that I don't pass out from lack of food & water! haha

Crunchy Rainbow

How are ya'll doing?! ;) This morning's breakfast was a bust ...
(cue Kashi GoLean Creamy Vanilla Oatmeal)I tried to make it better, but ended up throwing half of it away! Would anybody like to do a little trade....I'll send you the remaining 7 packets for...Anything! Even just a bar or two! I hate to waste food!

So, I decided to post a Meal of the Day today!

Because it is so worthy of it's own post! MMMM!

I sauteed my 2 remaining baby 'bellas (chopped), 1/8 c. chopped onion and a handful of carrot shreds in a bit of walnut oil. Then, I added the Spaghetti Squash until it was all heated through.

I plated the base mixture and then added some spaghetti sauce and lentils to the sauce pan. Once it was all bubbly and hot, I scooped it onto my colorful (AND FLAVORFUL) base!

SO AMAZINGLY GOOD. Period.

Yes, I took my plate outside to get the natural lighting! The pictures come out soo much better! I had Kashi Heart to Heart Original Whole Grain Crackers alongside.

I found these at Target the other day and HAD to have them because they are new and I am a foodie! haha They have the same look as Triscuits, but they don't have much flavor. Some have the perfect touch of salt, while other bites are as bland as can be! If Kashi could correct that error, these wouldn't be a bad snackaroo! However, they aren't my top favorite!

Now, I'm off to organize all of your entries (89 so far! Wowzers!) for MY GIVEAWAY! Which, by the way, you still have time to enter!

Enjoy your holiday weekend! :D

Prepared for Take-off

I officially feel 100% better! Yay! I went to bed at 11:30 last night and woke up at 5:30 (eeek!). Too early for muah, but I managed to get ready and drag myself downstairs...where I found an empty coffee pot (mom didn't think I would want any because I don't drink coffee every morning...BUT when I get up at 5:30AM...caffeine is a must, thank you very much!). I settled for Good Earth Sweet & Spicy Tea (becausee we were running late) which is bursting with goodness, so it was a nice replacement!
While the water was heating up on the stove, 2 sets of 365 Blueberry Mini Waffles were shoved into the toaster on high temp (Hurry!). I took out the little crispy delights and sandwiched them with PB so that I could take them on the road!
And off we went...."Downtown, Everything's great when your downtown, everything's waiting for you....."
Actually we got slightly lost trying to find our car and some policeman came over to help us! It was awkward...but nice!!
All of the tests checked out good (I got over my sickness JUST in time! Surgery is @ noon on MONDAY! And I can't eat after Midnight Sunday! EEK!) and I embarked on a little OperationBeautiful mission in the bathroom...
I showed my mom and she loved the idea! She wanted to buy me cute post-its at Target and I tried to explain to her that I already have like 39584375 post-its! haha
By the time we reached Target, it was 1:00 and I was Hungary (like the country!). So I snagged a new Strawberry Banana Vivanno @ Starby's and I have got to tell you that, while I was not the biggest fan of the other Vivanno flavors, this was smooth and refreshing! With whey protein powder, fiber and a whole banana; it really kept me going!
No, I did not get two drinks...that would be some rehydrating water in the background!
I restocked my "Snickerdoodle" Kashi Cereal (whew!) at Target, along with lots of other goodies ($.99/lb Spag. Squash? $1.99 Blueberries?, $.99 Organic Carrots?, etc).
When I got home, I made a little snack platter...
  • 2 slices of WW French Bread ($.99/loaf at Target! I couldn't resist!)....grilled in the foreman
  • A Part-Skim Mozz Cheese Stick
  • A Big Fat Organic Carrot
  • A mixture of freshly shredded broccoli stock and lentils smoothered in CHILI POWDER! (Gotta love using up leftovers...making room for more tupperware in the fridge!)

Then I had a Penny's Low Fat Desserts Chocolate Chocolate Chip Muffin with a little Whipped Cream. Okay, serisouly, why haven't you tried these lucious, thick, moist, flavorful, LOW FAT, HIGH FIBER, melty, yummy, _________(insert mouth-watering word here) YET?!
And later on, these 365 Duplex Cookies were calling my name! :D
I then, unintentionally, ate enough Cinnamon Puffins and Rice Chex (Which I bought for my dad and he decided he didn't want, so now I've gotta finish it off....no problem, seeing as I LOVE ALL CEREAL, but it's not my favorite...) to make up my dinner.
After munching my way through cereal town, I went to the hardest spinning class ever and I loved it!

I just got home and, while I cooked my spaghetti squash and had it all ready for a nice post-workout meal, all I was craving was some refreshing fruit! And now I am about to spread an Arnold's Sandwich Thin with some PB and see who gets voted off SYTYCD!
  • 1 JUICY Orange
  • A handful of freshly frozen cherries [[I know there are people who say they don't like cherries....but, perhaps you should give them another shot.... ;) ]]
  • A handful of frozen grapes
Just what I needed!
  • So you guys claim that Pepperidge Farms' "Sandwich Thin" look-alikes are ALREADY OUT?! Great, they must not sell those around me either! :(
  • Some of you were asking, so here is the recipe for my veggie burgers (Click HERE). I need to make some tomorrow!
  • GIVEAWAY TIME: SnackFace (I had never heard of this cool blog!)
  • And of course, DONT FORGET TO ENTER MY PENNY'S LOW FAT DESSERTS GIVEAWAY!
  • Remember that you can get 3 extra entries for every $5 that you donate to my Race for the Cure Fund.

I am thinking of doing some more giveaways in the near future SOLEY to raise money for the Race for the Cure Fund. What would motivate you guys to donate to this cause? I am open to suggestions! Thank you to Anna, who was my first contributor!

Phenomenal Thins

Hello everyone! I feel much better today (although not 100%...so I skipped the gym today! Actually, I got on my workout clothes and was trying to determine which would be lower impact...Spinning or Pilates....and then I told myself that NEITHER would be best for my body because I need to be 100% before I go back to sweating my heart out! Especially with surgery around the corner....so no workout it was! I was looking forward to it too....Owell!

Anyways, I got nine hours of sleep last night, which I really needed. However, I didn't wake up until late and just had a banana for "breakfast" around 10ish.

Look at what our neighbor brought us back from her trip to Florida....
Arnold Sandwich Thins (yes, they are whole grain white and I would prefer whole grain, but WHO CARES!). I can't find these in any store (I don't think they are sold in TX), so I was pumped! I made a PBJ on one last night and FELL IN LOVE (bad thing!). I have heard rumors that Pepperidge Farms is making a Copy Cat version and it better be coming out SOON! For lunch, I made some of the best sweet potato fries ever (topped with Fajita Seasoning! MMM!) and alongside, I had the same wrap that I had in this post, but stuffed with lettuce after taking a spin in the oven. I actually made two and froze this one, so I could have a quick lunch sometime. That's a good tip! Make your own wraps! It'll be cheaper!
Then I had three (yes, three) Whole Foods 365 Duplex Sandwich Cookies before heading off to work..where I had a few baby samples of frozen yogurt as I was "testing" the machines! ;)
After work, I had about 3/4 cup of this Kashi "Snickerdoodle Cookie" Cereal (I think I confused some people by calling it that in my last post...The real name is Kashi Warm Cinnamon Oat Heart to Heart). But from here on out, it shall be known as Snickerdoodle Cookie Cereal....
And now I am officially OUT! ***gasp***
Then I had some orange slices and freshly frozen sliced cherries!
I was enjoying eating in little spurts! haha
Then I put those marvelous Sandwich Thins to GOOD USE! I grilled the thins on the foreman while my homemade veggie burger cooked on the stove. (This was my last veggie burger, so I need to make more! It is so nice to have them at hand and they are so much better than store bought!).
One side of the toasty/doughy goodness had the veggie burger topped with honey mustard. While the other side had broccoli shreds (Simply take the broccoli stocks and shred them through a grater. Full of flavor and soooooo good! LOVE THEM!) and roma tomato slices. This was a truly phenomenal burger!Dessert came in the form of a Penny's Low Fat Desserts Chocolate Chip Cookie topped with PB.

Seriously, this was so soft, creamy and delicious, I couldn't believe it... That extra addition of PB made allllll the difference!
I have no words.

Go enter my GIVEAWAY now, so that you can make the delicious treat above for yourself! While you do that, I am going to go watch SYTYCD and eat some popcorn! :D
